• 3 tablespoons minced fresh cilantro or parsley (reserve some for garnish)
• 2 tablespoons white wine vinegar or cider vinegar
• 2 tablespoons olive oil
• 1 tablespoon tomato paste
• 2 teaspoons cinnamon
• 1 teaspoon allspice
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 1/2 teaspoons kosher or sea salt
• freshly ground black pepper
• 3 pinches of sugar
