Ingredients

• 12 ounces cremini mushrooms, cleaned and sliced
• 1 cup dry farro, cooked according to the packages directions.
• 1 large leek, white parts only, sliced and cleaned
• 2 medium carrots, cut into ¼ inch dice
• ¼ cup dry white wine
• 2 garlic cloves, minced
• 2 sprigs fresh thyme
• kosher salt and black pepper

Optional

• 6 cups beef stock (homemade is best - optional: vegetable stock for a vegetarian version)
